Ingredients

  • 5 large onion (s), (diameter approx. 4cm)
  • 3 bulbs garlic
  • 6 kg mussel (s) (mussels)
  • 4 bunches parsley
  • 7 kg tomato (s), peeled, from the can
  • Wine, white (approx. 7 tablespoon)
  • 1 tablespoon pepper, white
  • 3 tablespoon salt

Instructions

  1. Chop the 5 onions into small slices.
  2. Chop the 3 garlic bulbs into small slices.
  3. Wash the 6 kg mussels under running water, discarding any that do not close.
  4. Roughly chop the 4 bunches of parsley.
  5. In a large saucepan, cook the chopped onions and garlic over medium heat for 15 minutes until softened.
  6. Add 7 tablespoons of white wine and cook for 1 minute.
  7. Arrange the washed mussels on top of the onions and garlic without stirring.
  8. After 5 minutes, add the 7 kg of peeled tomatoes from the can.
  9. Mix the mussels well and cook over medium heat for about 20 minutes until the shells have opened.
  10. Add 1 tablespoon of white pepper and 3 tablespoons of salt.
  11. Stir in the chopped parsley.
  12. Discard any mussels that have not opened.
  13. Serve with baguette bread.
