Ingredients

  • 1 egg yolk, depending on the amount salad up to 2
  • 2 tablespoon mustard, medium hot
  • 5.6 tablespoon oil (walnut or peanut oil)
  • 1 pinch (s) salt, 2 tablespoons Aceto Balsamico di Modena
  • Black or white pepper from the mill
  • 1 onion (s), finely chopped, or granules
  • 1 clove garlic, finely chopped or granules
  • 1 piece (s) ginger, small, finely chopped, or powder
  • 1 teaspoon sugar
  • 250 ml meat or vegetable broth

Instructions

  1. Mix egg yolks with mustard until it emulsifies (combines). Then stir in walnut or peanut oil until it emulsifies. Stir in the balsamic vinegar until it emulsifies.
  2. Mix the spices, including sugar, onion, garlic and ginger with the broth. Make a taste test (seasoning).
  3. Serve the sauce with the salad, pour over it and mix well.
