Ingredients
- 1 egg yolk, depending on the amount salad up to 2
- 2 tablespoon mustard, medium hot
- 5.6 tablespoon oil (walnut or peanut oil)
- 1 pinch (s) salt, 2 tablespoons Aceto Balsamico di Modena
- Black or white pepper from the mill
- 1 onion (s), finely chopped, or granules
- 1 clove garlic, finely chopped or granules
- 1 piece (s) ginger, small, finely chopped, or powder
- 1 teaspoon sugar
- 250 ml meat or vegetable broth

- Mix egg yolks with mustard until it emulsifies (combines). Then stir in walnut or peanut oil until it emulsifies. Stir in the balsamic vinegar until it emulsifies.
- Mix the spices, including sugar, onion, garlic and ginger with the broth. Make a taste test (seasoning).
- Serve the sauce with the salad, pour over it and mix well.
