- 1 kg potato (s), waxy
- 1 kg carrot (s)
- 250 g diced ham
- 2 liters vegetable stock, instant
- 0.5 ½ pack parsley, frozen or fresh
- 4 piece (s) sausage
- 400 g beans, white, optional
- flour

- Prepare 2 liters of strong vegetable stock. Cut the potatoes, carrots and sausages into slices.
- Fry the ham cubes vigorously with 1 tablespoon of oil until they are nice and dark. Then deglaze with the vegetable stock and bring to the boil. Taste to see if it is nice and strong, as the potatoes and carrots can take a lot of it. Add the sliced potatoes and carrots. If you like it, you can add 400 g of white beans.
- Let the stew simmer until the carrots are still firm to the bite. So the taste is preserved. At the end, let the parsley and the pieces of sausage simmer for 4 - 5 minutes.
- Make a roux from the flour and butter and add to the soup until the desired consistency is achieved.
- If you like, you can puree some or all of it before adding the sausages. We don`t do that.
- A dark bread or a roll and sour cream tastes good with it.
