Ingredients

  • 4 fish fillet (s) (plaice fillets without skin, approx. 300 g)
  • 2 tablespoon lemon juice
  • 1 small onion (s) or shallot
  • 1 small bell pepper (s), red
  • 1 small zucchini
  • 1 tablespoon oil
  • 100 ml vegetable stock
  • 2 sprigs thyme or 1/ teaspoon. separate thyme
  • 150 g processed cheese, lihter (tomato-paprika)
  • salt and pepper

Instructions

  1. Wash the plaice fillets, pat dry and cut in half lengthways. Drizzle with the lemon juice and let it steep for about 10 minutes.
  2. Preheat the oven to 200 ° C (convection 180 ° C). Wash the zucchini and cut 8 slices lengthways with the vegetable peeler. Cut the rest into small cubes. Also cut the onion and bell pepper into small cubes.
  3. Heat the oil, fry the diced vegetables for about 3 minutes and then add the stock. Add the thyme and bring to the boil. Stir in the cheese and let it melt while stirring.
  4. Now pat the fish fillets dry and sprinkle with salt and pepper. Place the zucchini slices on top, roll up and secure with toothpicks. Put in a baking dish and pour the sauce over it. Bake in the preheated oven for about 15 minutes.
  5. This goes well with rice or mashed potatoes.
