Ingredients

  • 1 ½ kg mirabelle plums, weighed and prepared
  • 250 g suar, brown
  • 5 chilli pepper (s), dried, ground in a mortar
  • 2 tablespoon spice mixture, (Ras-el-Hanout)
  • 3 small onion (s), chopped
  • 2 small cloves garlic, chopped
  • 150 ml vinegar, white balsamic vinegar
  • 1 teaspoon salt

Instructions

  1. Mix all ingredients and place in a sufficiently large saucepan.
  2. Bring to the boil and then simmer over medium heat for about 1 hour.
  3. Pour into prepared twist-off glasses and stand on the lid to cool.
