Ingredients

  • 400 g squid (s), small (cleaned)
  • 2 cloves garlic
  • 2 spring onion (s)
  • 0.5 ½ bunch parsley, smooth
  • 4 tablespoon olive oil
  • 3 tablespoon wine, white, dry
  • 1 tablespoon vinegar (white wine vinegar)
  • salt
  • sugar

Instructions

  1. Wash the cleaned squids and cut into 2 cm wide rings. Cut the tentacles off the head.
  2. Finely chop the peeled garlic cloves. Cut the spring onions into fine rings. Chop the parsley.
  3. Steam the garlic in the oil over a mild heat, then add the parsley and squid. Simmer for 1 minute while stirring, add wine, vinegar and 3 tablespoons of water. Season with salt and a pinch of sugar and serve lukewarm with baguette.
  4. Note: It is important that the squid steeps only briefly over a mild heat. Otherwise it will be tough as rubber.
