Octopus with Grilled Artichokes

A very tasty dietary dish made from fried artichokes with zucchini and boiled octopuses.

Servings: 5

Ingredients

  • Octopus – 1 kg
  • Peeled artichokes – 400 g
  • Zucchini – 1 pc.
  • Tomatoes – 3 small
  • Carrot
  • Celery
  • Onion
  • Bay leaf
  • For the vinaigrette sauce:
  • 1/2 lemon juice
  • Olive oil – 4 tablespoons
  • Parsley greens – 3 sprigs
  • Fresh mint – 7 leaves
  • Salt
  • Pepper

Directions

  1. Boil the octopuses. To do this, add peeled carrots, onions, celery and bay leaves to boiling salted water. Throw in a natural wine cork. Dip octopuses into water and cook until tender.
  2. Artichokes, if fresh, peel and cut into thin slices. If using frozen ones, defrost them beforehand.
  3. Cut the zucchini into thin slices. Salt. Fry vegetables in a preheated grill pan without oil! Not for long, 5-7 minutes.
  4. Place the fried artichokes and zucchini on a platter.
  5. Cut the tomatoes into large wedges, add salt and also fry in a grill pan for 3-4 minutes.
  6. Put on a dish.
  7. Place an octopus cut into large pieces in the center.
  8. Prepare the vinaigrette sauce. In a bowl, beat together the lemon juice and olive oil. Add chopped parsley and mint. Season with salt and pepper.
  9. Season the dish with the prepared sauce. Let it brew for 10-15 minutes.
