Ingredients

  • 4 medium egg (s)
  • 6 tablespoon heavy cream
  • 2 tablespoon herbs, Italian
  • Oil (sunflower oil)
  • 16 slices Parma ham, thinly sliced
  • 16 basil leaves (large leaves)
  • a bit salt
  • some pepper, freshly ground

Instructions

  1. Beat the eggs and whisk together with salt, pepper, cream and the Italian herbs.
  2. Heat the sunflower oil in a medium-sized pan and bake half of the egg mixture into a pancake. Remove and bake a pancake from the second half of the egg mixture. Let it get cold.
  3. Divide the two pancakes into 8 pieces each. Cover each piece of cake with 1 slice of Parma ham and 1 basil leaf each and roll up from the tip to the broad side. Pin with 1 wooden skewer and serve.
