Pancakes a la Pizza

Incredibly juicy and tender pancakes with a pizza flavor – a hearty breakfast or snack that conquers from the first bite. Airy dough cooked on kefir, an appetizing filling of sausages, tomatoes, sweet peppers, cheese, and greens – a win-win combination of flavors inherent in pizza, but in the form of mouth-watering browned pancakes. Ingredients

  • Kefir – 250 ml
  • Sweet pepper – 220 g
  • Tomatoes – 200 g
  • Raw smoked sausage – 100 g
  • Hard cheese – 70 g
  • Wheat flour – 160 g
  • Eggs – 2 pcs.
  • Green onion – 2 stalks
  • Fresh parsley – 2 sprigs
  • Sugar – 0.5-1 teaspoon (to taste)
  • Soda – 0.5 teaspoon
  • Salt – 0.5 teaspoon
  • Ground black pepper – 1-2 pinches (to taste)
  • Vegetable oil – 1-2 tbsp (for frying)

Directions

  1. Combine kefir, salt, sugar, and soda. Mix everything thoroughly and let the mixture sit for a few minutes while you prepare the rest of the ingredients. During this time, the soda will react with kefir and the mixture will slightly foam.
  2. Peel the bell peppers and cut them into small cubes. Cut the tomatoes and sausage into cubes too. Chop green onions and parsley with a knife. Grate cheese on a fine grater.
  3. Add eggs, sausage, and grated cheese to the kefir mixture. Mix everything well.
  4. Sift all the wheat flour into a bowl at once. Stir well again.
  5. Add black pepper, bell peppers, tomatoes, and herbs to the resulting thick dough. Save a pinch of green onions to garnish the finished pancakes, if desired.
  6. Mix everything well again. The dough is ready. You can start frying pancakes.
  7. Preheat a skillet over medium to slightly low heat. Using a brush, lightly coat the pan with vegetable oil. In portions, 1 tbsp put the dough into the pan. Fry the sausage, tomato, and pepper pancakes for about 3 minutes, until golden brown on one side.
  8. Then turn the pancakes over, cover the pan with a lid, and cook the pancakes for about 2-3 minutes more, until golden on the other side.
  9. Place the pancakes on a napkin or paper towel for 20-30 seconds to absorb the excess oil.
  10. The pizza pancakes are ready. Sprinkle a pinch of green onions over the pancakes if desired and serve. Bon Appetit!
