  • 200 g almond (s), roasted, (ready-made or roasted yourself)
  • 4 egg (s)
  • 100 g suar
  • 1 packet vanilla sugar
  • 100 ml orange juice
  • 1 cup cream, more
  • cream stiffener

Instructions

  1. Mix the eggs with the sugar, the vanilla sugar and the orange juice in a stainless steel bowl and beat over the water bath until frothy, white. Don`t let it get too hot! Then beat cold over the cold water bath and set aside.
  2. Now whip the cream until stiff. Depending on the number of calories and quantities you want, you can whip 1 or 2 cups of cream. If it goes too slowly, you can also add a cream stiffener, but it doesn`t have to be.
  3. Now put the almonds in a freezer bag, close the air tightly and beat them with a meat tenderizer on a board. Depending on the size you want.
  4. Now fold the cream and the almond pieces into the egg mixture and place in a loaf tin lined with cling film and place in the freezer overnight.
  5. The sliced parfait is served on a fruit mirror or simply next to a slice of orange with a few individual roasted almonds.
