Ingredients

  • 100 g parsley root (s)

  • 1 teaspoon mustard
  • 2 Table spoons milk
  • 1 teaspoon lemon juice, freshly squeezed
  • 1 pinch (s) salt
  • some pepper from the mill
  • possibly herbs, freshly chopped

Instructions

  1. Peel and roughly grate the parsley root. Make a homogeneous salad dressing from olive oil, mustard, milk, salt and pepper. Mix in fresh herbs such as parsley or basil if you like.
  2. This raw vegetable salad is a perfect addition to the usual raw vegetable salads, especially since parsley root is usually only underestimated as a soup vegetable. Raw it has a fine, slightly sweet, mild taste that is reminiscent of a mixture of parsley, carrot and celery.
