Pasta Salad with Feta Cheese and Rocket

Ingredients

• 350 g pasta, mini penne
• 0.5 ½ pack feta cheese
• 0.5 ½ pack rocket, approx. 150-200 g, depending on taste
• 1 medium onion (s)
• 1 clove garlic
• salt
• pepper
• sugar
• 2 tablespoon olive oil or wild garlic oil
• 1 teaspoon butter

Instructions

1. Cook the pasta as usual, rinse and mix immediately with 1 tablespoon of oil in a bowl so that they do not stick together.
2. Finely dice the onion and sauté in the butter, season with salt and pepper, then pour 1 tablespoon of sugar over the onion and let the sugar caramelize. Take out of the pan and let cool down.
3. Cut the feta cheese into small cubes. Clean the rocket and tear or cut into small pieces. Chop or press the garlic cloves.
4. Add everything to the slightly cooled pasta and mix well. Then season with salt, pepper and a little sugar. Add a little more oil as needed.
5. Tastes great with grilling or meatballs.
