Ingredients

  • 500 g pasta, (Farfalle)
  • 3 spring onion (s)
  • 50 g tomato (s), dried
  • 300 g spinach, fresher
  • 100 g pine nuts
  • 4 tablespoon olive oil
  • 0.5 ½ chilli pepper (s), fresh
  • 2 small cloves garlic
  • salt and pepper

Instructions

  1. Cook the pasta in salted water until al dente. Then drain and rinse under cold water. Drain and transfer to a large salad bowl.
  2. Clean and finely chop the spring onions. Cut the dried tomatoes into strips. Clean the spinach and cut into fine strips.
  3. Roast pine nuts in a pan (without oil!). Add everything to the pasta.
  4. For the dressing:
  5. Chop half the chilli very finely. Press the garlic cloves. Mix with olive oil and season with salt and pepper. Pour the dressing over the salad and mix well.
  6. Tip:
  7. Rucola can also be used instead of spinach.
