Ingredients

  • 2 carrot (s)
  • 1 onion (s)
  • 1 clove garlic
  • 1 bunch parsley
  • 2 tablespoon walnuts
  • 3 tablespoon olive oil
  • 30 g parmesan cheese
  • Broth, as needed
  • 300 g ribbon noodles, or noodles your choice

Instructions

  1. Slice the washed and peeled carrots lengthways. Peel and finely dice the onion.
  2. For the pesto, finely puree the garlic, washed parsley, walnuts and 2 tablespoons of oil with a magic wand. Grate and stir in the parmesan. Possibly. Add a little more stock and season.
  3. Steam the onion cubes and carrot strips in the remaining oil for about 5 - 10 minutes. Season with salt and pepper.
  4. Cook the pasta in salted water until al dente, mix immediately with the carrots and pesto and serve.
