Ingredients

  • 250 g chanterelles, small ones
  • 1 onion (s)
  • 75 g bacon, mixed, smoked,
  • 250 g pasta, orecchiette
  • salt
  • 1 tablespoon flour
  • 0.25 liter ¼ broth, clear
  • 200 g whipped cream
  • 0.5 ½ bunch parsley
  • 1 tablespoon oil

Instructions

  1. Carefully clean the chanterelles and dice the onion. Cut the bacon into fine strips.
  2. Cook the noodles (these are so small bag noodles) according to the instructions on the packet (of course others can do as well).
  3. Drain the bacon in hot oil until crispy, add the onions and chanterelles and fry for approx. 2 minutes. Dust with flour, sweat briefly and deglaze with stock and cream while stirring and bring to the boil.
  4. Wash the parsley and cut into fine strips. Season the sauce with pepper and possibly salt and stir in half of the parsley. Drain the pasta, drain well and fold into the sauce. Sprinkle with the rest of the parsley.
