Ingredients

  • 300 g spahetti
  • 1 handful rocket
  • 10 cherry tomato (s)
  • 2 tablespoon olive oil
  • Parmesan
  • salt and pepper
  • 1 teaspoon ajvar, hotter
  • 1 clove garlic
  • 1 pinch (s) sugar

Instructions

  1. Prepare the spaghetti according to the instructions on the packet. Wash and roughly chop the rocket (3-5 cm), halve the tomatoes, grate the parmesan (3-4 tablespoon).
  2. In a large pan, heat the olive oil with the pressed garlic clove. Add the cherry tomatoes, season with a little salt and sugar and fry for about 5 minutes, then remove the garlic clove and stir in the ajvar (if you like it milder, you can leave out the ajvar).
  3. Then add the cooked spaghetti with about 8 tablespoons of the cooking water, season with salt and pepper and mix everything in the pan.
  4. Fold in the grated Parmesan and the chopped rocket and serve!
