Ingredients

  • 100 g pecorino, rated
  • 400 ml cream
  • 2 egg yolks
  • 1 egg (s)
  • 50 grams sugar
  • 3 tablespoon walnuts, chopped
  • 5 tablespoon sugar
  • 5 tablespoon sugar
  • 1 pear (s)
  • 0.25 liter ¼ port wine

Instructions

  1. Preparation of parfait:
  2. Whip the first 5 ingredients in a water bath and peel to rose, whip cold on ice water.
  3. Pour half of the mixture into the mold and freeze in the freezer, chill the other half.
  4. Brittle:
  5. Roast the nuts dry, add sugar and caramelize, spread on baking paper and let cool.
  6. Chop the brittle and pour onto the frozen parfait. Add the rest of the mixture and let it freeze.
  7. Pears:
  8. Caramelize sugar, deglaze with port wine, add pears and steam, let cool.
