Ingredients

  • 2 kg ribs (peeled ribs)
  • 6 tablespoon tomato ketchup
  • 2 tablespoon honey, e.g. acacia honey 830;
  • 3 tablespoon soy sauce, dark
  • 3 tablespoon sherry, medium dry or a little balsamic vinegar
  • 2 slices ginger, finely chopped
  • Salt and pepper, freshly ground
  • 1 teaspoon spice mix (barbecue spice)

Instructions

  1. Portion the spare ribs the size of a palm, clean, remove any excess fat.
  2. Gently heat the tomato ketchup, soy sauce and honey in a small saucepan until the honey has dissolved. Season well with the sherry and the remaining spices.
  3. Place the ribs upside down on the grill and grill for about 5 minutes, then turn and brush with a little grill sauce. Turn again after 5 minutes and brush the underside. Continue like this until the ribs are nice and crispy and covered in a deep red glaze.
  4. Any remaining sauce is enjoyed with the ribs.
