Delight in every bite … This is how Philippine wedding buns impressed me! They cooked 50 pieces, and it turned out to be not enough! Small, fragrant, with a delicate creamy filling! Cooking is a must, you cannot miss this!
Ingredients
For the dough:
Dry yeast – 1.5 teaspoon
Milk (warm) – 250 ml
Egg – 1 pc.
Butter (soft) – 70 g
Salt – 1/2 teaspoon
Flour – 500 g
For the filling and syrup:
Cottage cheese – 300 g
Sugar – 200 g + 2 tablespoons
Water – 150 ml
Vanilla
Yolk – for lubrication
Directions
Since flour is different, and the amount may differ from that stated in the recipe, we put a small part of the flour aside. In a cup with the rest of the flour we make a depression where we pour the milk and add the yeast. Let the yeast stand for a few minutes (to activate).
Add the egg, salt and soft butter. Knead the dough for 7-8 minutes, adding flour if necessary. The dough should be soft, pliable and sticky to your hands quite a bit.
Let the dough grow (come up), in time – about 1 hour. During this time, you can make the filling, grind the cottage cheese with sugar (2 tablespoons).
Lightly knead the finished dough and divide into 50 pieces of equal weight (mine were 18 g each).
We leave the koloboks on the table under the film for about 10 minutes. After that we form a small cake with our hands and spread the filling on the center. We pinch the edges, forming a closed bun.
Place it in the prepared form with a pinch down. I had to use two forms to place all 50 pieces.
Do not press the buns tightly, they will still come up for about 10 minutes while the oven heats up. Before baking, grease the buns with egg yolk.
Filipino wedding buns are baked at a temperature of 200 degrees for 15 minutes. While the buns are in the oven, prepare sugar syrup: mix sugar and water, bring to a boil, boil the syrup for 3 minutes, add vanilla, remove from heat and cool slightly.
We take out the buns and immediately pour the syrup (I divided them into two forms).
