Ingredients

  • 800 g pineapple, fresh, prepared, weihed, in pieces
  • 2 lime (s)
  • 4 tablespoon coriander greens, chopped
  • 2 tablespoon pepper, red, possibly a little more (see tip)

Instructions

  1. Mix the prepared pineapple in a bowl with the juice and the grated zest of the limes. Fold in the coriander leaves and the ground pepper. Cover and marinate for at least 1 hour.
  2. Before serving, you can add a little ground pepper, if desired.
  3. As a fruity component, it goes well with mascarpone-vanilla cream and hazelnut-almond meringue.

  5. Tip:
  6. The red pepper I use is NOT pink pepper berries, but a special pepper that I brought from Phu Quoc.
  7. It can best be replaced with Szechuan pepper.
