- 400 g potato (s)
- 75 g flour
- 125 g parmesan, rated
- 1 egg (s)
- 1 pinch (s) nutmeg
- 1 tablespoon parsley, chopped
- 2 sage leaves, chopped
- some salt and pepper
- 80 g mozzarella, diced
- Oil, for frying

- Press cooked, peeled potatoes through the potato press while they are still hot. Add the flour, Parmesan cheese and the egg to the cooled potatoes and work them into a smooth dough. Mix in the herbs and spices.
- Shape the dough into cakes, press a cube of mozzarella into each one (make sure that each mozzarella cube is completely covered with dough). Bake golden yellow on both sides in hot oil.
