Ingredients

  • 1 kg potato (s), e.g., Bintje, not a waxy variety, grated
  • 1 large onion (s), finely chopped
  • 3 egg (s)
  • 2 tablespoon potato flour
  • salt
  • pepper
  • mace
  • Maggi
  • Parsley, finely chopped
  • Chives, finely chopped

Instructions

  1. Basic recipe:
  2. Squeeze out the grated potatoes in a cloth and mix with the onions, spices, herbs, beaten eggs and the potato starch.
  3. Heat the peanut, rapeseed or olive oil in a good frying pan, add the buffer mixture by tablespoon and fry until golden brown.
  4. Traditionally, apple compote or (for the hamburgers) ketchup go well with it.
  5. Variations:
  6. - Add 150 g frozen peas
  7. - replace part of the potatoes with grated carrots
  8. - replace part of the potatoes with grated zucchini
  9. - Replace some of the potatoes with grated sweet potatoes / Bataten / in Maori: Kumara
  10. - replace part of the potatoes with grated white beets
  11. - Add other Italian herbs and serve with a tomato salsa
  12. The imagination knows no limits!
