Pumpkin Casserole

The pumpkin casserole with rice is delicious. I’m preparing her for breakfast.

Servings: 8

Ingredients

  • Pumpkin – 400 g
  • Eggs – 3 pcs.
  • Sugar – 100 g
  • Rice – 100 g
  • Butter – 5 tbsp
  • Nuts – 0.5 cups
  • Lemon zest
  • Vanilla – to taste
  • Salt to taste

Directions

  1. Boil rice. Grate the pumpkin. Separate the yolks from the whites.
  2. Take 3 tablespoons of butter, add 100 g of sugar, egg yolks, lemon zest, vanilla, nuts.
  3. Add grated pumpkin and boiled rice to this mass.
  4. Separately beat the egg whites and salt with a mixer and add to the finished mass.
  5. Grease a baking dish with butter. Put the whole mass evenly in a mold, and cut butter into slices on top (2 tablespoons).
  6. Bake in a preheated oven for 40-50 minutes at 200 degrees.
