Ingredients

  • 1 pumpkin (s), e.g., Butternut or Hokkaido
  • 3 onion (s), diced
  • 40 g horseradish, fresh
  • 40 grams sugar
  • 4 tablespoon vinegar (red wine vinegar)
  • 60 g butter
  • 2 tablespoon tomato paste
  • 200 g sour cream
  • salt and pepper
  • Vegetable broth, grainy
  • Curry powder

Instructions

  1. Slice the pumpkin into strips, cut the onions into cubes, peel the horseradish and grate finely.
  2. Let the sugar turn golden brown in a pan, deglaze with vinegar, add butter and let it froth up once. Briefly sauté the onions in it. Add the pumpkin strips and sauté for about 5 minutes. Stir in tomato paste and sour cream, season with salt, pepper, vegetable stock powder and curry and cook for another 3 minutes. Finally stir in the horseradish.
  3. It goes well with fried potatoes, duck breast or leg or game.
