Ingredients

  • 25 g amaranth
  • 50 g water
  • 200 g quark
  • some rice syrup or coconut syrup
  • 8 apricot (s) (mini apricots)
  • 4 tablespoon orange juice
  • 1 teaspoon coconut blossom sugar to reduce the apricots
  • Coconut blossom sugar to sweeten the amaranth

Instructions

  1. Simmer the amaranth with a little sugar for 10 minutes and let it soak for 10 minutes. Let the swollen amaranth cool down.
  2. Beat the quark with the syrup until smooth. Possibly sweeten the amaranth a little.
  3. Wash, halve, core and dice the apricots. Simmer the apricot cubes and the juice with a little sugar until the liquid is reduced. The cooking time is approx. 3 - 5 minutes.
  4. First pour the quark into glasses, then pour the compote and finally the amaranth on top.
