Ingredients

  • 3 egg (s)
  • 250 g quark, (20%)
  • 150 ml buttermilk
  • 300 g flour
  • salt
  • pepper
  • nutmeg
  • 0.5 ½ bunch parsley, chopped, fresh
  • 100 g mountain cheese, shaved

Instructions

  1. Mix the quark and eggs, add the buttermilk and flour and stir to a smooth batter. Season well with salt, pepper and grated nutmeg.
  2. Let the dough rest for about 20 minutes.
  3. In the meantime, bring a large saucepan of salted water to a boil.
  4. Press the dough through a spaetzle press (or with a spaetzle board) into the boiling water. When the spaetzle float on the surface, skim it off with a skimmer and place in an ovenproof dish. Sprinkle with parsley and cheese and bake in the 250 ° C oven for 5-6 minutes.
  5. The spaetzle also taste good if you just toss them in a pan with butter.
