Ingredients
- 1 medium onion (s), red
- 3 cloves garlic, or less
- 1 tablespoon olive oil, extra virgin
- 2 small aubergines, firm
- 1 tablespoon curry powder or curry paste
- 0.5 can ½ coconut milk
- 1 pinch (s) lime zest, freshly grated

- Peel and roughly chop the onions and garlic. Heat a pan, pour in the olive oil and fry the chopped onion and cloves of garlic.
- Cut the aubergines into cubes, add to the onions and fry with the curry powder. Now deglaze with the coconut milk.
- Now stir in the lime zest and simmer gently for 10 minutes.
- Goes well with poultry!
