Ingredients

  • 150 g quinoa, white
  • 100 g avocado (s), finely diced
  • 90 g red pepper (s), finely diced
  • 90 g bell pepper (s), reen, finely diced
  • 50 g sprin onion (s), cut into thin rins
  • 75 g cucumber (s), pitted, cut into fine cubes
  • 1 tomato (s), pitted, finely diced
  • 1 lime (s), the juice
  • 6 tablespoon olive oil
  • 50 g walnuts, chopped
  • 2 stalks mint, chopped
  • 2 stalks parsley, smooth, chopped
  • 4 stalks coriander, chopped
  • 1 handful lettuce, mixed for decoration
  • 1 stem / s coriander leaves, the leaves, for decoration
  • 1 stalk / e mint, the leaves, for decoration
  • a bit salt
  • some black pepper, freshly ground

Instructions

  1. Put quinoa in 500 ml boiling, salted water. Simmer gently for 10 minutes with the lid on. Turn off the stove and leave it covered for another 5 minutes. Drain and spread on a large plate to cool.
  2. Mix the quinoa with the vegetables, herbs and nuts. Whip the olive oil and lime juice into the emulsion, add, mix and season with salt / pepper.
  3. Arrange on plates and decorate with a few lettuce leaves and herbs.
