  1. We clean the red fish from scales and cut them into steaks up to 2 cm thick.

  2. We spread the fish on a baking sheet covered with parchment. Salt the fish well on both sides. Sprinkle with a pinch of sugar, black pepper to taste, and a pinch of ground ginger. Use our hands to drive the spices well into the steaks.
