Ingredients

  • 2 large onions, red
  • 1 cup apple juice or red wine
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon honey
  • 1 teaspoon sugar, brown
  • 1 teaspoon, heaped paprika powder, noble sweet
  • some parsley
  • oil

Instructions

  1. Cut the onions into small cubes and fry in oil. Add the remaining ingredients up to and including the paprika powder and let everything simmer for 30 minutes. Puree, stir in some chopped parsley and serve.
  2. The onion sauce tastes very good with grilled meat. But it is also good as a cold spread, or spread warm on baguette or farmhouse bread and serve as a starter with a dollop of crème fraîche. I always do this by arranging small, coated strips of bread in the shape of a star on a plate and placing a spoonful of crème fraîche, garnished with parsley, in the center of the plate.
  3. You can also use the onion puree as a filling for a quiche.
