Ingredients

  • 2 medium potato (s), waxy
  • 2 potatoes with blue meat, e.g. Lottevite or Blue Salad (not mandatory, garnish)
  • salt
  • 3 tablespoon olive oil
  • 1 shallot (s), possibly 2 depending on size
  • 10 g butter
  • liter ⅛ vegetable stock
  • 100 g crème fraîche
  • 0.5 ½ bunch basil
  • pepper
  • 6 artichoke hearts (canned), naturally pickled
  • 2 fish fillet (s), red snapper with skin, approx. 10 g each
  • 1 sprig rosemary, plus a few tips to garnish
  • Shrimp (s), party shrimp to garnish

Instructions

  1. Wash, peel and dice light-colored potatoes (approx. 1 cm edge length). Pre-cook in boiling salted water for about three minutes, pour into a sieve and drain well.
  2. Cook the blue potatoes in salted water for about 20 minutes.
  3. Peel shallots, dice finely, sauté in butter. Add the vegetable stock, fry the shallots uncovered until soft, reducing the stock a little. Stir in the crème fraîche. In the meantime, rinse the basil, shake it dry, pluck the leaves from the stems and cut into strips.
  4. Drain the artichoke hearts well. Slice two pieces to garnish, dice the rest.
  5. Heat a tablespoon of olive oil, cook the potato cubes in it and fry until brown. Finally add the artichoke cubes, heat. Season to taste with salt and pepper.
  6. Cut the skin of the red snapper fillets diagonally with a sharp knife. Heat the remaining two tablespoons of olive oil, fry the fish fillets with the sprig of rosemary first brown on the skin side, then finish cooking on the meat side. Depending on the thickness of the fillet, this takes a total of six to eight minutes. Salt and pepper.
  7. Peel and slice the blue potato.
  8. Just before serving, put the shallot and créme fraîche mixture and basil strips in a blender, puree. Season to taste with salt and pepper.
  9. Arrange on preheated plates as follows: Place the artichoke-potato-vegetables in the middle, then the red snapper fillets. Place the slices of artichokes and blue potatoes around them to garnish. Garnish with rosemary tips and party prawns. Pour some of the basil foam over it, serve the rest separately.

  11. Instead of the blue potatoes, the dish can be served summery with diced tomatoes.
  12. The amount is sufficient as a fish course within a multi-course menu or a slightly larger starter, but can also be topped up as a main course.
