Ingredients

  • 250 g rice
  • 100 g peanuts, roasted
  • 100 ml coconut milk
  • 200 ml cream
  • Salt and pepper
  • Vegetable stock, granulated

Instructions

  1. Cook the rice according to the instructions on the packet for about 12-15 minutes. After about 10 minutes, when the water has not yet boiled off completely, add the peanuts and stir well. When the rice has the desired firmness and all the water has boiled away, add the coconut milk and cream, stir well and season.
  2. I always prefer a teaspoon of powdered vegetable stock, but that`s a matter of taste. Be careful with the salt, as the roasted peanuts are usually already salted.
  3. Simmer gently for another 2 - 3 minutes until the desired consistency is achieved.
  4. With a mixed salad, the rice is a delicious main course or it goes well as a side dish, for example. B. to fish.
