Ingredients

  • 300 g rocket
  • 200 g basil
  • 1 tablespoon balsamic vinegar (white)
  • 6 tablespoon olive oil
  • 1 clove garlic
  • 1 tablespoon honey (forest honey)
  • 50 g pine nuts
  • 50 g parmesan (in one piece)
  • salt and pepper

Instructions

  1. Wash, clean and spin dry the rocket leaves. Mix with the basil leaves. Mix the balsamic vinegar, oil and honey together with a small whisk, season with salt and pepper at the end and squeeze in the clove of garlic. Stir thoroughly again with the small whisk.
  2. Roast the pine nuts in a pan. Mix the rocket and basil with the dressing, sprinkle the pine nuts over the top and finely grate the parmesan with a peeler.
  3. The salad should be green - but if you want a splash of color, tomato cubes (peel, core and dice tomatoes) can be lifted underneath.
