- 2 carrot (s)
- 0.75 ¾ Mango (s), ripe
- possibly pine nuts
- 3 tablespoon olive oil
- 3 tablespoon balsamic vinegar, light
- some nutmeg
- salt and pepper
- Herbs (salad), freeze-dried or fresh

- Carefully wash the rocket in cold water and spin dry with a salad spinner. Grate the carrots as finely as possible. Dice as much mango meat as desired, not too small. Put everything in a bowl.
- Mix the oil, vinegar, the spices and herbs into a dressing, pour over the colorful salad and mix well. If you like, lightly toast the pine nuts in a pan and pour over the salad before serving.
- Freshly baked herb baguette tastes good with it.
