Ingredients
- 500 g rocket
- 2 tablespoon balsamic vinegar, (dark)
- 2 tablespoon olive oil or rapeseed oil
- salt and pepper
- 50 g pine nuts
- 50 g parmesan, (in one piece)

- First wash and dry the rocket.
- Mix together vinegar, oil, salt and pepper and lightly toast the pine nuts in a pan without fat.
- Carefully mix the rocket with the oil and vinegar mixture and arrange on three plates. Finally sprinkle the pine nuts and the freshly planed parmesan on top.
