  1. Freeze the fish or let it thaw a little if frozen. This will make the fish easier and thinner to cut.
  2. Cut with a very sharp knife into thin slices. Put on a dish or in portions on plates. Make a refueling.
  3. Chop the onion, cilantro, and pepper very finely.
  4. Grate the zest.
  5. Add lemon juice and soy, stir.
  6. Pour the dressing just before serving.
