Ingredients

  • 750 g black salsify (s), fresh
  • 1 small lemon (s), juice it
  • 100 g butter, mildly soured
  • 30 g breadcrumbs
  • 1 teaspoon, leveled nutmeg, grated
  • Salt and pepper, whiter

Instructions

  1. Bring water with lemon juice to a boil in a saucepan.
  2. Remove the sand from the salsify under running water with a brush, then peel with a peeler, cut diagonally into 2 - 3 cm long pieces and cook in simmering lemon water for approx. 20 minutes. Strain and evaporate briefly.
  3. Melt the butter in a pan, add breadcrumbs, spices and black salsify and brown very lightly by swirling several times. Season to taste with salt.
  4. Serve as an accompaniment to all kinds of meat.
