Ingredients

  • 150 g spelled
  • 40 g butter
  • 65 ml milk
  • 1 teaspoon honey
  • 2 pinches salt
  • 0.5 ½ cube yeast
  • 20 g sesame seeds
  • 1 onion (s)
  • salt
  • Chilli powder
  • 1 egg yolk
  • 2 tablespoons cream or Cremefine for cooking
  • 1 tablespoon oil
  • 100 g crème fraîche with herbs
  • Flour for the work surface

Instructions

  1. Finely grind the spelled. Cut the butter into flakes and add. Dissolve the honey and yeast in the lukewarm milk and pour in. Add a pinch of salt. Knead all ingredients well. Cover and let the dough rise for an hour.
  2. In the meantime, toast the sesame seeds in a small pan without fat until they are lightly browned and begin to smell. Finely chop the onion. Heat the oil and fry the onion in it. Remove the onion from the heat and season with salt and chilli.
  3. Divide the proofed dough into 3 portions. Roll out each portion on a lightly floured work surface into a square with a side length of approx. 15 cm. Cut into 2 triangles each. Preheat the oven to 200 ° C.
  4. Spread the crème fraîche on the triangles. Place the onions on the crème fraîche. Roll up the triangles from the long side and shape them into croissants.
  5. Whisk the egg yolk with the cream and brush the croissants with it. Sprinkle with the sesame seeds. Bake in the preheated oven for about 20 minutes.
