Ingredients
- 1 tablespoon rapeseed oil
- 1 onion (s), peeled, diced
- 1 clove (s) garlic, peeled and diced
- 0.25 teaspoon ¼ coriander powder
- 0.25 teaspoon ¼ ginger powder or 1/2 fresh, grated ginger
- 1 teaspoon, heaped turmeric
- 500 ml vegetable stock
- 200 g parsnips, peeled, diced
- 200 g sweet potato (s), peeled, diced
- 200 g carrot (s), peeled, diced
- salt and pepper
- Chili powder or 1 small chopped chilli pepper
- 1 teaspoon coriander greens, finely chopped.
- 150 g chicken breast or other toppins, optional

- Heat the rapeseed oil in a large saucepan and sauté the onion cubes. Add the garlic cubes and let them turn to glass. Stir in coriander powder, ginger and turmeric and roast briefly. If fresh chilli is used, also process it. Pour in the hot vegetable stock.
- Bring to the boil, then add the vegetables and cook over medium heat for approx. 8 minutes until firm to the bite. Season to taste with pepper, salt and, if necessary, chilli powder.
- Now you can let diced chicken breast, shrimp, salmon or sausage slices cook in it.
- Before serving, sprinkle with chopped coriander (if not available, you can of course also use parsley) and enjoy hot.
