Ingredients
- 1 red pepper (s), diced
- 1 bell pepper (s), yellow, diced
- 1 can kidney beans
- 1 small can corn, approx. 200ml
- 1 pack sheep`s cheese, with herbs, diced
- 1 shallot (s), finely diced
- 2 tablespoon parsley
- 3 tablespoon vinegar, (walnut vinegar)
- 1 tablespoon mustard
- 2 teaspoons honey
- 1 teaspoon maple syrup
- Herbs, mixed, (chives, parsley, dill etc.)
- salt and pepper
- 1 tablespoon olive oil

- Chop the bell pepper, sheep cheese and shallots as indicated above and place in a bowl along with a drained can of kidney beans and a small can of corn. Chop the herbs and sprinkle over them.
- Mix a salad dressing with the remaining ingredients and pour over the ingredients. Mix well and let it steep for at least 2 hours, then it tastes best.
- The dressing is the most important component. It should be very strong and have a clear, sweet and sour taste (goes great with the corn). For this reason, the oil plays a rather subordinate role in contrast to honey and maple syrup. Taste the dressing and change it to your taste.
- This salad goes wonderfully with grilled meat in summer.
