Ingredients

  • 2 zucchini
  • 1 eggplant (s)
  • 1 red pepper (s)
  • 1 bell pepper (s), yellow
  • 1 tablespoon honey
  • 1 tablespoon balsamic vinegar
  • salt and pepper
  • 1 onion (s), red
  • 1 vegetable onion (s)
  • 3 tomato (s), ripe

Instructions

  1. Wash vegetables, cut into slices or strips. Cut the tomatoes into cubes, season with salt.
  2. Fry the vegetables in this order in hot (!) Olive oil: onions, peppers, courgettes, aubergines, always adding the next vegetables after 1 - 2 minutes. At the very end add the tomatoes, then reduce the heat. Cook for approx. 5 - 10 minutes, depending on how firm you want the vegetables to be.
  3. At the end add honey and aceto (can also be more or less according to taste), salt and pepper.
  4. This goes well with warm flatbread (pide).
