Ingredients

  • 400 g flour, (whole wheat flour)
  • 100 g wheat meal
  • 100 g sunflower seeds
  • 20 g yeast, (fresh) or
  • 1 packet yeast, (dry yeast)
  • 400 ml water, (cold)
  • 2 teaspoons salt
  • 1 tablespoon sugar or honey
  • Wheat meal, for shaping

Instructions

  1. Dissolve the yeast together with the sugar or honey in cold water and, if using dry yeast, let rise for 10 minutes.
  2. Then add whole wheat flour, whole wheat meal and salt and knead everything into a smooth dough. Finally knead in the sunflower seeds.
  3. Let the bread dough rest for 30 minutes and then knead again briefly.
  4. Shape into an elongated loaf and roll in crushed wheat.
  5. Let rise up to twice its size directly on the baking sheet or in the proofing basket and cut diagonally several times on the top.
  6. In the meantime, preheat the oven to 250 °.
  7. Insert the loaf of bread, set the temperature back to 200 ° and bake the bread for about 40 - 45 minutes.
  8. Then leave to cool on a wire rack.
