Ingredients

  • 80 g rice, (approx.) Cooked from the day before
  • 1 medium onion (s), finely diced
  • 1 small carrot (s), coarsely grated
  • 50 g cheese, rated (to your own taste)
  • 1 tablespoon breadcrumbs
  • 200 g quark
  • 0.5 ½ bunch radishes, finely diced
  • 0.5 ½ bunch chives, cut into fine rolls
  • 1 tablespoon sour cream
  • 3 tablespoons oil, for the pan
  • salt and pepper

Instructions

  1. Mix the quark and sour cream until smooth. Fold in the radishes and chives.
  2. Season with salt and pepper and set aside.
  3. Sauté the onion in 1 tablespoon of hot oil and place in a bowl. Mix with rice, carrot, breadcrumbs and cheese and season to taste. Then shape 3-4 meatballs from the mixture.
  4. Heat the pan with the remaining 2 tablespoons of oil and fry the meatballs on each side for approx. 3-4 minutes over medium heat (if you prefer it crispy, roll the meatballs in flour beforehand).
  5. Meatballs on the plate, add the quark - that`s it!
  6. A baguette or bread roll tastes good with it, but also a quick schnitzel or fried fish.
  7. I`ve already eaten it with 2 hard-boiled eggs - what a single household has in stock.
