Ingredients
- 2 handfuls lamb`s lettuce
- 1 handful rocket
- 1 handful white bread, diced
- 1 handful red cabbage (red cabbage)
- Salt and pepper, whiter
- sugar
- 1 radish (s), black
- 1 teaspoon soy sauce, Japanese (Terijaki)
- 100 g oose breast, smoked
- 2 tablespoon pomegranate (seeds)
- 2 tablespoon pumpkin seeds
- 1 pear (s)
- 2 walnuts
- 1 tablespoon oil (argan oil)
- 1 teaspoon vinegar (pear vinegar)
- some sea salt
- some flowers - pollen
- some salt (black Hawaiian salt)
- Lemon juice

- Cut the red cabbage into fine strips, add salt and sugar and leave to steep for at least 2 hours. Finely chop the radish, season with salt, sugar and drizzle with the terijaki sauce, also let it stand for a good while.
- Roast the white bread cubes in a little olive oil until crispy. Roast walnuts and pumpkin seeds without oil.
- Sort the salads, wash and spin dry. Peel the pear and cut into wedges, place in lemon water until serving.
- Release the pomegranate seeds. Slice the goose breast thinly.
- Mix a marinade from argan oil, pear vinegar, sea salt and white pepper. Pull the lettuce leaves through, drain and arrange on plates.
- Arrange red cabbage, radish, pear wedges and goose breast next to the salad, drizzle with the marinade and sprinkle with pomegranate seeds, walnuts, pumpkin seeds and croutons.
- Sprinkle 1-2 pinches of pollen and black salt on the lettuce.
