Ingredients

  • 1 spaghetti squash (approx. kg)
  • 2 teaspoons olive oil
  • 2 stems rosemary
  • 300 g cocktail tomatoes
  • 200 g feta cheese
  • 100 g Kalamata olives
  • 10 basil leaves
  • salt and pepper

Instructions

  1. Preheat the oven to 200 ° C top / bottom heat.
  2. Wash the pumpkin, cut in half and remove the seeds with a spoon. Rub the pumpkin halves with the oil and add the rosemary. Then salt and pepper. Place the pumpkin halves inside out on a baking sheet and bake in the hot oven for about 45 - 55 minutes.
  3. Meanwhile, halve the tomatoes, cut the feta cheese and olives into pieces. Cut the basil into small pieces.
  4. Take the pumpkin out of the oven, loosen the pumpkin flesh with a spoon and place in a bowl. Mix the pumpkin spaghetti with the tomatoes, feta, olives, basil, salt and pepper and pour into the two pumpkin halves.
  5. Put again in the hot oven for approx. 10-15 minutes.
