- 1 leek, thin
- Salt and pepper, whiter
- 500 g spahetti, (e.. spelled spahetti
- 10 half walnuts
- 300 g blue cheese, milder
- 3 tablespoon heavy cream
- Lemon juice
- 2 tablespoon white wine, drier

- Clean and wash the leek and cut into fine rings. Blanch 2-3 minutes in boiling salted water, then rinse with cold water. Cook the noodles in salted water until they are al dente. Finely chop the walnuts.
- Thinly cut the rind from the cheese, cut the cheese into small pieces and melt in the cream over a mild heat. Stir well. Season the sauce with pepper, lemon juice and wine and stir in half of the nuts and the leek.
- Drain the spaghetti, place in deep plates, pour cheese and walnut sauce on top and serve sprinkled with the remaining nuts.
