Ingredients

  • 200 g whole wheat pasta
  • Water (salt water)
  • 1 large zucchini
  • 4 tablespoon peanut butter, crunchy
  • 150 ml vegetable stock
  • 2 tablespoon soy sauce
  • 1 teaspoon sambal oelek, possibly more
  • 1 teaspoon curry paste, red
  • 1 tablespoon olive oil

Instructions

  1. Prepare the wholemeal spaghetti in salted water according to the instructions on the packet. While the pasta is cooking, cut the zucchini into fine strips with a peeler.
  2. Heat the oil in the pan and steam the zucchini strips in it for a few minutes. Then deglaze with soy sauce and vegetable stock. Add peanut butter, sambal oelek and red curry paste. Bring to the boil briefly, add the cooked pasta.
