- Peel and wash the potatoes and cut into small cubes or slices. Salt. Fry in plenty of hot oil over low heat for 15-20 minutes. Turn occasionally.
- Beat eggs. Cut the paprika sausage into small pieces and add to the beaten eggs.
- When the potatoes are fried golden brown, remove them, drain well and set aside. Let cool down briefly.
- Mix the potatoes with the eggs and paprika sausage. Put the mixture in a pan with a little oil and fry over medium heat. Use a plate to turn the tortilla and brown on the other side as well.
- Serve warm or cold.
- You can also prepare the tortilla with just potatoes and eggs without paprika sausage, or vary it with other ingredients such as onions, tuna, shrimp, bacon, mushrooms, etc.
