Ingredients

  • 400 ml oat milk (oat drink) (oat drink)
  • 40 g yeast, fresh or 2 packs dry yeast
  • 600 g spelled flour type 650
  • 2 tablespoon rock salt
  • 4 tablespoon baking soda
  • 600 ml water
  • hail salt, sesame seeds or grains for sprinkling

Instructions

  1. Warm up the oat drink. Not too hot, otherwise the yeast won`t rise. If fresh yeast is used, crumble it in a glass and add the lukewarm oat drink. Stir and wait about 10 minutes.
  2. Mix 600 g of spelled flour with 2 tablespoons of salt. If you are using dry yeast, mix it in with the flour. Pour the warm yeast drink (fresh yeast mix) onto the flour and knead well.
  3. Heat the oven to 50 ° C. Then exhibit and place the dough in a bowl in the oven. Let rise for about 15-20 minutes. The batter should have doubled in size.
  4. Knead the dough again and divide it into 10 equal parts. Now you can either form small knots, braids, rods or whatever you want.
  5. Bring 600 ml of water with 4 tablespoons of baking soda to the boil in a small saucepan (approx. 20 cm diameter). Place the biscuit pieces one after the other using a slotted spoon for 30 - 60 seconds. Dip in the boiling lye and then place on a baking sheet lined with baking paper. Sprinkle with the grit and bake in the preheated oven for 15 minutes. Allow to cool slightly.
